Job Description

The Line Cook is responsible for food preparation, production, presentation, and other related university food service duties at Alaska Pacific University (APU). This position does not involve supervising staff.

Responsibilities

  • Perform main line food production duties as assigned.
  • Work independently with minimal oversight.
  • Operate on hot and cold lines, maintaining quality and safety standards.
  • Coordinate with supervisors on daily needs, complete production sheets, and verify supplies.
  • Ensure sanitation and quality control in food production areas.
  • Assist in food service setup and maintenance of equipment.
  • Follow HACCP protocols and maintain logs.
  • Act as a backup for various food service positions as needed.
  • Monitor and instruct on proper rotation of produce and dairy.
  • Maintain cleanliness and safety of kitchen areas.
  • Participate in daily meetings and communicate with supervisors regarding operations.
  • Handle multiple tasks simultaneously and assist other staff as needed.
  • Perform other related duties as assigned.

Qualifications

  • High School diploma or GED.
  • Municipality of Anchorage Food Handler's Card or ServSafe Certification within 30 days of hire.
  • At least 2 years of line cook or related experience.
  • At least 1 year of experience in food sanitation, preparation, and quality control.
  • English proficiency in speaking, reading, and writing.

Preferred Qualifications

  • Two years of culinary vocational training or an Associate Degree in Culinary Arts.
  • Catering experience.
  • Extensive food service management experience.

Working Conditions and Physical Requirements

Environment: Indoor, controlled; moderate noise level.

Physical: Ability to lift/move up to 50 lbs, and perform tasks involving standing, sitting, walking, and other physical activities.
